We drink this green smoothie so often in our house that I just have to share the simple recipe with you. I had a similar smoothie once at our Farmer’s Market and sought to recreate it at home. This smoothie is perfect anytime of the day. We have it for a breakfast drink or an afternoon snack almost every day, and it is an excellent pre workout meal.
The recipe is very simple and so delicious. I use a Vitamix to blend it super smooth and creamy. I typically eyeball my measurements depending on how many of us in our family are going to drink it, but for our family of 4, I blend:
1.5 cups of almond milk
1.5 cups of coconut water
1 TBSP of almond butter
2 huge handfuls of fresh spinach
1 handful of ice
The result is a grass-green smoothie that tastes like an almond butter-banana dream. The spinach is completely blended smooth and undetectable in taste. (Not that I mind the taste of spinach, but this is a great way to get picky kids to drink it up). This smoothie has it all: protein, leafy greens, and natural energy and potassium from the coconut water and banana. And because I’m using a Vitamix, all of the fiber and nutrients are blended in, nothing squeezed out of this beauty. You can easily add a scoop of protein powder to give this smoothie an extra boost.
